As a Spanish colony for several hundred years, Cuba is soaked in Spanish tradition. The owners of La Barraquita are descendents from the Valencia region of Spain and have dedicated their restaurant to bringing this cooking tradition to Cuba. Their elegant establishment has many decorations and photos from that region.
This workshop consists of making a traditional paella from start to finish. Paella's are a wonderful stew of rice, vegetables, and meats, all cooked in a special way distinct to a region and particular to the individual chef. Each main ingredient - the rice, vegetables, and meats, all have there own sophisticated cooking process. Guests will help in the cutting and mixing of all these ingredients while the chef oversees everything.
The workshop takes place inside the restaurant proper as all the cooking is done with portable equipment. The restaurant staff and chefs will provide valuable background and be available to answer all your questions including how they source their beautiful ingredients under difficult conditions in Cuba.
